Avocado is a delicious and very versatile fruit that allows us to make hundreds of dishes. But didn’t you know that it also has a place in baking? Yes, and today we have just brought you an avocado cake.
As a fruit, avocado provides a soft and delicate flavor to the cake. In addition, it is a source of healthy fats and multiple vitamins and minerals that make this dessert ideal for all kinds of people. If you find the recipe too sweet, simply reduce the sugar portions.
Ingredients
For the cake:
- 2 avocados.
- 3 eggs.
- 240g flour.
- 160g of sugar.
- 1/2 squeezed lemon.
- 1 teaspoon of baking powder.
For the glaze:
- 1 Greek yogurt.
- 400g powdered sugar.
- Crushed hazelnuts.
Preparation
Step 1 Mash avocado
We take our avocados and with a knife we open them lengthwise, that the knife always grazes the bone. We remove the bone giving a blow on it with the knife and remove the pulp with a spoon. Add the avocado in a bowl and add the lemon juice over it to prevent the avocado from oxidizing. This step is important, as the avocado oxidizes very quickly.
With a fork (you can also use a mortar or a food processor), mash the avocado as much as possible. It doesn’t matter if there are lumps, as they will be removed when the cake is cooked.
Step 2 Mix the eggs
In a separate bowl, add the three eggs together with the sugar and the olive oil. Mix until you get a homogeneous mixture without lumps. The longer you beat the eggs, the fluffier the cake will be, since the amount of air injected will be greater.
Step 3 Mix the avocado with the rest of the ingredients
Then, take the previously mashed avocado and add it to the rest of the ingredients. Mix with wrapping movements so that all the ingredients and flavors are well integrated.
The next step is to add the wheat flour with the baking powder previously sifted to avoid lumps and give more smoothness to our cake. We must continue beating in an enveloping motion. The mixture will be ready when it has a homogeneous and creamy texture.
Step 4 Add the mixture to the mold and bake
Once we have the mixture ready, we must grease the mold with olive oil and add a little wheat flour to prevent our cake from sticking.
Add to the mold and bake for 40 minutes at 180 ºC (360 º F).
Step 5 Prepare topping
While our cake is baking, add 400 g of sugar to a bowl along with Greek yogurt and mix until both ingredients are well integrated.
Once we take out our cake and it has cooled, we add the topping trying to cover the whole cake. Then, we take the hazelnut and place it on top. And that’s it, our avocado cake is ready, it looks delicious, enjoy!
