We continue with our avocado recipes and this time we have the stuffed avocado. This is a dish that serves as an appetizer, although it can also be a very complete dish.
Besides the fact that it has a very good presentation and its flavor is exquisite, there are hundreds of ways to prepare stuffed avocado. On this occasion, we have brought you 6 easy-to-prepare recipes that will delight your palate.
1: Stuffed avocado with tuna
Ingredients
- 2 avocados.
- 2 eggs.
- 1 onion.
- 1 can of tuna.
- 2 surimi sticks.
- Cilantro, salt and pepper to taste.
- Lemon juice.
- 1 tablespoon of mayonnaise.
Preparation
The first thing we are going to do is to take the eggs and cook them for 12 minutes in water until they are hard.
While the eggs are cooking, we peel the avocado. The idea when peeling the avocado is to remove the pulp without damaging the skin that we will use later. You can cut the avocado into squares and then remove with a spoon.
Add lemon juice to the skin and avocado to prevent oxidation. In this step, you could also add the salt, pepper and cilantro to the avocado. Stir until the avocado is creamy.
Then, cut the surimi sticks and onion into small squares and add to the avocado.
When done, grate one of the boiled eggs and cut the other into small pieces. Add to the salad along with the tuna and serve in the skin.
2: Avocado stuffed with shrimp
Ingredients
- 2 medium avocado.
- 200 gr of fresh shrimps.
- 1 onion.
- Some lettuce leaves.
- 5 surimi sticks.
- Mayonnaise to taste.
Preparation
The first thing we are going to do is to cook the shrimps. Take some water with salt (one or two fingers will be enough). Once it has started to boil, add the shrimp.
After the water has started to boil again the shrimp will be ready. Add them in very cold water (with ice better) to make it easier to peel them.
Cut the lettuce into small strips. Onion and surimi in small pieces. Add all the ingredients in a bowl. Peel the avocado and cut it into small pieces. Spray the skin and pulp with lemon juice to prevent them from oxidizing.
Then, mix all the ingredients in the bowl and add salt and pepper to taste. Serve in the skin and you will have the stuffed avocado ready.
3: Stuffed avocado with chicken
Ingredients
- 1 avocado.
- 2 chicken fillets.
- 1 onion.
- A handful of corn.
- 1 carrot.
- Mayonnaise.
- Lemon juice.
- Pepper
Preparation
Cut the onion and the carrot in small squares. Then, add salt to the chicken, grill it and also cut it into small pieces.
Peel the avocado without damaging the skin. Cut the avocado into chunks and sprinkle lemon on both the flesh and the skin to prevent them from oxidizing.
Mix all the ingredients in a bowl (including the corn) and add pepper and mayonnaise to taste. And then we can serve our avocado stuffed with chicken:
4: Avocado stuffed with cheese
Ingredients
- 1 avocado.
- 4 or 5 cherry tomatoes.
- Mozzarella cheese to taste.
- Olive oil.
- Cilantro.
- Balsamic vinegar.
- Salt.
- Pepper.
Preparation
Chop the Mozzarella cheese in small squares, while the cherry tomato in two parts or smaller squares (according to taste). We add in a bowl all the ingredients together with a spoonful of olive oil and vinegar. We also add salt and pepper to taste.
Peel the avocado, cut the pulp into pieces and mix with the rest of the ingredients. And ready, we can serve in the avocado skin.
5: Avocado stuffed with eggs
Ingredients
- 2 avocados.
- 4 eggs.
- A bit of spring onion.
- A little bit of paprika.
- Pepper and ground salt to taste.
Preparation
This preparation is simpler than the previous ones. Cut the spring onion and the paprika.
Then, open the avocado in half and remove the stone with a knife. With the help of a spoon, remove a little of the pulp in the middle so that almost all the egg will fit.
Add each of the eggs to each of the avocado halves. Add salt, pepper, chives and bell pepper on top. Bake the avocados at 180º C for 12 minutes. They are ready to eat:
6: Stuffed avocado with razor clams
Ingredients
- 1 avocado.
- 1 can of razor clams.
- 8 spoonfuls of mayonnaise.
- Lettuce.
- 2 cherry tomatoes.
- Onion.
- Paprika.
- Lemon juice.
- Salt and pepper.
Preparation
We will begin chopping all the ingredients in small pieces: the razor clams, the onion, the tomatoes and the paprika. The lettuce can be cut into small strips.
Then, open the avocado in half and remove the pulp. Without damaging the peel and adding lemon to prevent it from oxidizing.
Add all the ingredients in a bowl with the lemon juice, salt, pepper and mayonnaise. And serve in the avocado skin. You can garnish the avocado with chives and some tomato pieces.
