Gazpacho is a delicious preparation that has many variations. But today we will focus on green gazpacho. It is called green because most of the ingredients are of this color.
Besides providing a lot of energy, this cold soup is quite nutritious and will help us to hydrate easily. And it is very easy to make. Learn how to prepare green gazpacho.
Ingredients
- 2 avocados.
- 1 cucumber.
- 200 g of fresh spinach.
- 1 onion (if it is tender, it is better).
- 3 green tomatoes.
- 1 piece of dry bread.
- 1 green bell pepper.
- 1/2 clove of garlic.
- 1 egg.
- 1 glass of water.
- 80 ml vinegar.
- 1 lemon.
- 1 celery root.
- Good Herb and basil.
- Green apple or pear.
Preparation
Step 1 Blanch spinach
We are going to take the spinach and we are going to blanch it in boiling water so that it keeps its green color.
Once the water has boiled pass the spinach through it for a few seconds and then place it in cold water.
Step 2 Chop all the ingredients
Now it’s time to prepare the main ingredients. Take the cucumber and peel it without leaving the shell.
Cut the cucumber and the other ingredients such as tomato, onion, bell pepper and avocado in a way that makes it easy to mash. Only use 2 tomatoes, the other one save it for the garnish.
Step 3 Soak the bread
Take the bread and soak it in water and a little vinegar to get the flavor.
Step 4 Beat all the ingredients
Once the bread is ready we add all the ingredients in our blender or food processor.
In this step, we must add the olive oil, the glass of water, the lemon, the salt, the pepper, the herbs and the basil.
Step 5 Adding mayonnaise to the mixture (Optional)
Quickly prepare homemade mayonnaise with the egg and olive oil.
The mayonnaise gives a creamier touch to the gazpacho. But it is optional and depends on the taste of each one. Add the mayonnaise to the rest of the mixture and blend.
Once we have mixed everything, we must strain it. And we keep it in the fridge, while we are in the next step.
Step 6 Preparing the garnish
The leftover tomato should be diced together with the onion, chives, green apple or pear. And mix it all with a little mayonnaise.
Then, we add all the garnish in a plate and add all the gazpacho and that’s it.
